A peaberry is produced naturally when one of the two seeds inside the coffee “cherry” aborts. The nutrients destined for both seeds are thought to be concentrated in the survivor. Although we are not botanists, the peaberry is a slightly more concentrated taste, distinguishable from its twined survivor. The coffee has intense brightness and high acidity. The taste is sweet and fruity with berry notes and a hint of chocolate.
