The Coffea Diversa Rume Sudan varietal is a medium body coffee processed in the Winey method. The Winey process is similar to the fermenting of Amarone wine in which coffee cherries are left to over-ripen, dry and then ferment under sunlight. An outstanding coffee with low acidity, ripe fruit notes and hints of flowers and aromatic wood.
